Chocolate Chip Oatmeal Cookies (GF/ VG option )

Ingredients

  • 1 cup fine almond flour

  • 1 cup quick cooking oats ( not rolled)

  • ¼ cup shredded coconut (fine)

  • 1/4 teaspoon salt

  • 1/4 teaspoon baking soda

  • 1/4 cup maple syrup

  • ¼ cup melted butter ( vegan if preferred )or coconut oil

  • 1 teaspoon of vanilla extract

  • 1/2 cup of dark chocolate chips ( vegan if prefered)

METHOD

  1. Preheat the oven to 350 F and line baking sheet with parchment paper.

  2. Mix almond flour, oats, coconut , baking soda, and salt in a bowl.

  3. Add in to dry ingredients maple syrup, butter, and vanilla and combine. Fold in chocolate chips.

  4. Using a cookie scoop (or tablespoon) form 12 cookies onto your baking sheet ( they will fit when cooking)

  5. Bake for approx 8 minute.

  6. Remove from oven and let cool directly on baking sheet ( don’t touch!). You may also put directly into freezer to set.

  7. When set place in an airtight container

Healthy Hummus

Add some protein and fiber to your diet as well as some powerful B vitamins, folate and iron! The perfect, quick, high protein snack that can be used as a dip with veggies, in a wrap, or even in a recipe to add flavor and texture. Tip: You can find this in any grocery store in a small container ( and grab some baby carrots) for a last minute Grab and Go snack!

Ingredients

  • 2 (15oz) cans of chickpeas drained ( reserve the liquid)

  • 4 Tbsps. of fresh lemon juice

  • 1/4 cup sesame tahini ( use a brand that is a not too thick)

  • 1-2 cloves of garlic grated

  • 1 tsp salt

  • 1/4 tsp cumin

  • Dash of cayenne pepper

  • 2 tbsp olive oil for drizzling

  • c hopped parsley for serving

  • Paprika for serving

To Prepare

In a food processor combine the chickpeas, lemon juice, tahini, garlic, cumin, cayenne pepper, salt, olive oil, and ⅓ cup of the reserved liquid from your chickpeas.

Process for several minutes until smooth and creamy.

Add more liquid and process again if it seems too thick.

Adjust to taste garnish.

May be made a few days ahead for easy prep.

Body Detox Juice

  • 1 Beet peeled

  • 2 carrots

  • 4 stalks of celery

  • 1 lemon peeled

  • 1 sm piece of fresh ginger

  • 1 green apple

Juice and enjoy chilled
