Maple Cider Rosemary Chicken

This Maple Cider Rosemary Chicken is cozy, healthy, and full of fall flavor. With just a few simple ingredients, you’ll have a delicious dinner that’s ready in no time.

Ingredients:

Chicken breasts or thighs (about 1 ½ lbs)
3 tablespoons apple cider (unsweetened)
1 tablespoon pure maple syrup
2 tablespoons olive oil
2 teaspoons Dijon mustard
2 teaspoons fresh rosemary, chopped (or ½ teaspoon dried)
1 garlic clove, minced (optional)
½ teaspoon sea salt
¼ teaspoon black pepper

Instructions:

Place chicken in a shallow dish or zip bag.


Whisk cider, maple syrup, olive oil, Dijon, rosemary, garlic, salt, and pepper until smooth.


Pour marinade over chicken and let sit at least 30 minutes (up to 3 hours for more flavor).


If grilling: Heat grill to medium. Cook 5–6 minutes per side until chicken is cooked through.


If baking: Preheat oven to 400°F. Bake chicken in a lined dish for 22–25 minutes until juices run clear.
Rest 5 minutes before serving.

✨ Pro Tip: Pair this with roasted butternut squash or Brussels sprouts — the maple-cider glaze ties everything together beautifully.

Crispy Air Fryer Tofu with Miso Sesame Sauce

Tofu is a plant-based protein powerhouse—rich in calcium, iron, and amino acids. Air frying gives it a golden, slightly crunchy texture without heavy oils or coating. Paired with a savory-sweet miso sesame sauce, this dish is light, nourishing, and full of flavor. A quick, easy and healthy addition to your menu.

Ingredients:

14 oz firm or extra-firm tofu (pressed 15–20 minutes)
1 tablespoon tamari or low-sodium soy sauce
1 tablespoon avocado or olive oil
1 teaspoon rice vinegar or lemon juice
½ teaspoon garlic powder
½ teaspoon smoked paprika (or chili powder for spice)
Pinch of sea salt and black pepper

For the Miso Sesame Sauce

2 tablespoons white miso paste
1 tablespoon tahini (or toasted sesame oil for lighter version)
1 tablespoon rice vinegar or lemon juice
1 tablespoon tamari or low-sodium soy sauce
1 teaspoon maple syrup or honey
2–3 tablespoons warm water (to thin as needed)
Optional: pinch of grated ginger or garlic

Instructions:

Cut pressed tofu into bite-sized cubes.
In a bowl, whisk tamari, oil, and vinegar. Add tofu and toss gently.


Season with garlic powder, paprika, salt, and pepper. Toss again until coated.


Place tofu in a single layer in the air fryer basket.


Air fry at 375°F for 12–15 minutes, shaking halfway through, until golden and slightly crisp.


Meanwhile, whisk miso, tahini, vinegar, tamari, and maple syrup in a small bowl. Add warm water gradually until smooth and drizzleable. Adjust to taste.


Serve tofu hot with a generous drizzle of miso sesame sauce.

Pro Tip

This tofu is delicious on its own, but also perfect over brown rice, quinoa, or a big green salad. Make extra sauce—it doubles as a quick dressing or veggie dip!

Citrus-Herb Marinated Grilled Shrimp

This is one of my favorite go-to recipes. It is light and zesty, rich in protein and low in calories, making it an ideal choice for a healthy meal. The citrus marinade not only enhances the flavor but also adds a dose of vitamin C, perfect for a main meal or anytime.

Ingredients:

1 pound shrimp (peeled and deveined)
2 tablespoons olive oil
1/4 cup orange juice
2 tablespoons lime juice
1 teaspoon lime zest
2 tablespoons fresh herbs (chopped, such as cilantro, parsley, or basil)
1 tablespoon honey
1 teaspoon cumin
1 teaspoon paprika
Salt to taste
Pepper to taste

Instructions:

In a bowl, whisk together olive oil, orange juice, lime juice, lime zest, chopped fresh herbs, honey, cumin, salt, and pepper to make the marinade.

Add the shrimp to the marinade and toss to coat evenly. Let the shrimp marinate for 15-30 minutes.

Preheat the grill ( or skillet) to medium heat, then cook the shrimp for 2-3 minutes per side, or until they are pink and opaque ( you can also put your marinated shrimps on skewers or use a BBQ basket )

Serve with your favorite sides. Great for tacos, salads, appetizers etc.
