Citrus-Herb Marinated Grilled Shrimp

September 19, 2025 Lisa Mindel

This is one of my favorite go-to recipes. It is light and zesty, rich in protein and low in calories, making it an ideal choice for a healthy meal. The citrus marinade not only enhances the flavor but also adds a dose of vitamin C, perfect for a main meal or anytime.

Ingredients:

1 pound shrimp (peeled and deveined)
2 tablespoons olive oil
1/4 cup orange juice
2 tablespoons lime juice
1 teaspoon lime zest
2 tablespoons fresh herbs (chopped, such as cilantro, parsley, or basil)
1 tablespoon honey
1 teaspoon cumin
1 teaspoon paprika
Salt to taste
Pepper to taste

Instructions:

In a bowl, whisk together olive oil, orange juice, lime juice, lime zest, chopped fresh herbs, honey, cumin, salt, and pepper to make the marinade.

Add the shrimp to the marinade and toss to coat evenly. Let the shrimp marinate for 15-30 minutes.

Preheat the grill ( or skillet) to medium heat, then cook the shrimp for 2-3 minutes per side, or until they are pink and opaque ( you can also put your marinated shrimps on skewers or use a BBQ basket )

Serve with your favorite sides. Great for tacos, salads, appetizers etc.

August 9, 2025 Lisa Mindel

Photo and recipe inspired by: Natteats

This is the kind of summer recipe you just toss it together and let the flavors do their thing. The sweet grilled (or raw) peaches, juicy tomatoes, spicy arugula or your favorite greens, fragrant basil, and the optional burrata are a match made in August heaven.

Ingredients:

3-4 cups of arugula, organic mixed baby greens or romaine ( or a combo)

2 firm peaches, quartered

1 cup cherry tomatoes, halved

1/2 medium thinly sliced red onion, or pickled red onions

8 oz of burrata ( feta/ goat/ dairy free) cheese

extra virgin olive oil

Instructions for Salad

Drizzle sliced peaches with extra virgin olive oil and toss to combine.

Grill for about 2-3 minutes per side or until grill marks appear.

Assemble the salad. On a large platter layer arugula ( greens), grilled peaches, tomatoes, onion and torn up burrata cheese ( or feta/ goat, or daily free option).

Drizzle with Basil Mint Vinaigrette right before serving. Fresh figs are fabulous too on this as well.

Basil Mint Vinaigrette

1/2 cup fresh basil chopped

1/2 cup fresh mint

1 garlic clove

juice and zest of one lemon

Makes 2 servings

Salads, and what yo u dress them with, are full of wonderful, nutritional ingredients that are vital to a healthy body. This recipe is a guide, but think about using up the odds and ends in the fridge. If you don’t have exactly what’s on the list, improvise! You could add some dinner leftovers, a can of chick peas, cooked lentils, nuts, seeds, tofu, tempeh, or beans for a protein punch.

These ingredients are basically the majority of my daily salad base. It is one of the ways you can get in most of your healthy, energizing whole foods daily. The toppings and protein choices may change but it will give you a consistent start to your lunch or dinner planning.

Make extra (keep avocados, onions, tomato’s, and dressing to the side and add in when ready to eat). Leave it in a covered storage bowl for another lunch or meal prep

 Ingredients:

  • 4-6 cups fresh salad greens like romaine, butter lettuce, red-leaf lettuce, arugula, spinach, kale etc …chop it and mix it up!

  • 1/2 avocado, peeled and diced (or use the whole avocado if you like!)

  • 1/2 (or more) tomato, diced OR hand full chopped cherry tomatoes

  • 1/2 medium cucumber, chopped into bite-size pieces

  • Handful or two of shredded red and green cabbage (about ½-1 cup)

  • 1/2 carrot, chopped or grated

  • 3-4 chopped fresh basil sprigs

  • 1-2 celery stalks chopped

  • 4-5 chopped fresh cilantro sprigs

  • ¼-1/2 cup chopped red onion or scallions

  • Micro greens and or sprouts of your choice ( I love crunchy pea sprouts)

  • 1 teaspoon hemp seeds (optional)

  • 2 tablespoons toasted sunflower seeds or almonds (spread on a baking sheet and roast at 300 for just a few minutes, they toast fast so keep an eye on them!) OR use them raw.

To Prepare:

  • Get a big salad bowl with lots of room. Add the lettuce, arugula, kale, tomato, and cucumber, celery, and whatever other veggies you’re playing with.

  • Top with the micro greens, sprouts, avocado, carrot shavings, and herbs.

  • Sprinkle with the seeds and nuts.

  • Lightly salt & pepper if you like.

  • Add in all your goodies (Plant Protein source, grains or other veg) Drizzle the dressing directly onto the salad and toss. Your super salad is ready for you!
