Cinnamon Baked Apples

One of my favorite cooked fruits during the holidays (or anytime). The warming spice of cinnamon helps balance blood sugar and fights inflammation making this a win win! I’ll even have this for breakfast with some plain yogurt or on my oats!

Ingredients:

6 large apples ( mix it up with some honey crisp and tart granny Smith)

2 tablespoons of lemon juice

2/3 cup of coconut sugar

1 pinch of nutmeg

1 1/2 teaspoons of cinnamon

1/2 teaspoon ground ginger

3 tablespoons cornstarch

1/2 cup chopped walnuts

3 tablespoons of fresh apple juice (or water)

1 pinch salt

Coconut whipped creme or vanilla bean ice creme (optional)

Instructions:

Preheat oven to 350 degrees.

Put to the side a 9x13 inch baking dish.

Peel, core and cut apple into quarters. Slice lengthwise into thin even slices.

Add slices to baking dish and add on top lemon juice, ginger, nutmeg, cinnamon, cornstarch, apple juice or water, and salt. Mix to combine and cover loosely with foil.

Bake for 45 minutes covered. Remove foil and sprinkle with walnuts. Bake for another 10-15 minutes until the center is soft and the apples have caramelized a bit.

Top with coconut whipped creme or vanilla ice creme or enjoy au natural!

Chocolate Truffles

Raw Chocolate Truffles

Ingredients:

  • 2 cups almond flour

  • 12-13 whole soft large dates ( soak in water for 10 minutes if not soft)

  • 2 tbsp raw cacao powder

  • 2 tbsp mini semi-sweet chocolate chips

  • 1/2 tsp cinnamon

  • 1-2 tbsp of water ( if necessary)

Instructions:

  1. Combine all ingredients ( except water) in a food processor

  2. Add 1 tbsp of water if its is not coming together ( it should be a touch hard to process)

  3. Transfer to a bowl and put in the freezer for 15-20 minutes

  4. Take a small ball scooper and roll into 1” balls

  5. Roll in cacao powder ( optional: sprinkle with shredded coconut or even drizzle some melted chocolate over each ball)

  6. Place rolled balls in the freezer separated on a small sheet pan or flat tupperware lined with parchment until hard . Store in a covered container in the freezer to keep fresh.

  7. Eat chilled or at room temp.

Chocolate Brownies with A Twist

Warm, Gooey, and Full of Goodness!
If you’re craving something sweet but want to keep it healthy, these sweet potato brownies are the perfect treat. They have all the rich, chocolatey goodness of traditional brownies but with a wholesome twist. Sweet potatoes not only add natural sweetness but are also packed with fiber, vitamins, and antioxidants. A win-win for your taste buds and your body!

Pro Tip: Sweet potatoes are loaded with beta-carotene, which is great for your skin and supports a healthy immune system.

Ingredients :

1 cup mashed sweet potato (from baked sweet potatoes)
½ cup almond butter
¼ cup cocoa powder
¼ cup maple syrup
1 tsp vanilla extract
1 tsp baking powder
¼ cup dairy-free chocolate chips (optional)

Instructions:

Preheat oven to 350°F. In a bowl, mix mashed sweet potato, almond butter, cocoa powder, maple syrup, vanilla extract, and baking powder until smooth. Fold in chocolate chips if using. Pour batter into a greased 8x8-inch baking pan. Bake for 20-25 minutes, until a toothpick comes out clean. Let cool before slicing.

WBB Pro Tip: For a fun twist, add a sprinkle of cinnamon or nutmeg to the batter for an extra warm and grounding flavor boost.
