Chocolate Dipped Delights

When you're craving a bit of chocolate with a mix of healthy, this is the perfect pair!

Ingredients:


1- 2 lbs of mixed fruit of choice ( make sure they are dry and almost to room temp)

1 cup chocolate (60%+ cacao chocolate chips)

1-2 teaspoons coconut oil ( I have also done this w/ out the oil)

Instructions:

1. Melt the chocolate, You can use a double boiler or the microwave.

2. Microwave method : Melt the chocolate in 20-30 second intervals stirring a few times. Heat small amounts at a time to prevent clumping.

3. Double boiler method: Use a glass or stainless steel bowl over a pot of simmering water (Keep some space between the water and the bowl) Stir frequently as the chocolate heats up.

4. Dip fruit into the melted chocolate. Lay it on a parchment or wax paper-lined baking sheet.

5. Refrigerate for 15-20 minutes to set up the chocolate. 

6. Serve chilled

Crunchy Cold Slaw

What a nice way to add crunch to any salad , side entree or added in a wrap. Healthy, creamy and crunchy all in one bite!

Ingredients:

  • 3/4 cup vegan or regular mayo ( may adjust to preference )

  • 3 tbsp apple cider vinegar

  • 1 tbsp Dijon mustard

  • 1 tbsp maple syrup

  • ¾ teaspoon celery seed

  • ¼ teaspoon salt

  • 8 cups shredded cabbage( I like both red and green)

  • 2 medium carrots, peeled into thin strips

  • 3 scallions, chopped

  • Freshly ground black pepper

  • Sliced almonds (optional)

Instructions:

  • Whisk up the dressing In a medium bowl .Mayo, apple cider vinegar, mustard, maple syrup, celery seed, salt, and a bit of pepper.

  • In a large bowl, toss together the cabbage, carrots, and scallions. Pour the dressing over the top and toss to coat. Season to taste with more salt and pepper as desired and add almond slices.

  • Store in the fridge in a sealed container.

Simple Peanut Sauce

Ingredients

1/2 cup of creamy peanut butter

1 tbsp of LOW sodium soy sauce or tamari

2 tbsp rice vinegar

2 tsp maple syrup

1 tsp grated ginger

1/2 tablespoon sriracha ( or more to taste)

1 tablespoon toasted sesame oil

4-5 tablespoons water

2 tablespoons lime juice

Instructions:

Whisk in a small bowl the peanut butter, tamari, ginger, vinegar, sesame oil, maple syrup, and sriracha. While whisking, add slowly 1 tbsp at a time of water to reach your desired consistency. You also may put all the ingredients in a small blender for larger batches to combine. Enjoy on Summer rolls or rice noodles.
