Chickpea/ Tofu Lettuce Cups

Ingredients

1 can (15 oz) chickpeas, drained and rinsed or 7 oz baked tofu cubes
1/2 cup diced bell pepper (any color)
1/2 cup diced cucumber
1/4 cup diced red onion
1/4 cup chopped fresh parsley
2 tablespoons lemon juice
2 tablespoons olive oil
1 teaspoon Dijon mustard
Salt and pepper to taste
8 large lettuce leaves (such as romaine or butter lettuce)

This also is DELISH with my peanut sauce ( just omit the oil, mustard and lemon)

Instructions:

1. Prepare the Chickpea Salad Mixture:

  • In a large bowl, combine the drained and rinsed chickpeas, mash slightly with a fork ( or add baked tofu cubes) diced bell pepper, diced cucumber, diced red onion, and chopped fresh parsley ( this gives such a fresh taste).

  • In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, salt, and pepper to make the dressing.

  • Pour the dressing over the chickpea or tofu mixture and toss until everything is evenly coated. Adjust seasoning to taste if needed.

  • 2. Assemble the Lettuce Wraps:

  • Lay out the lettuce leaves on a clean surface.

  • Spoon the chickpea/tofu salad mixture evenly onto each lettuce leaf, placing it near the bottom edge.

    3. Wrap and Serve:

  • Fold the bottom edge of each lettuce leaf over the chickpea/tofu salad mixture

  • Fold in the sides of the lettuce leaf, then roll tightly . You may also leave the lettuce leaf open and make a cup.

  • Secure with toothpicks if needed.

  • Serve immediately, or refrigerate in sealed container until ready to serve.

Red Lentil Soup ( Lisa's Family Favorite)

Ingredients

1.5 tbsp Olive oil

1 yellow onion diced

2 lg carrots peeled and cut into bite size pieces

4 celery stalks chopped

1 lg zucchini chopped

2 cups of red lentils soaked for 10 minutes and rinsed well

1 lg handful of baby spinach

2 bay leaves

7 cups of vegetable or chicken broth

1 lemon to squeeze

1 tbsp of Better than Bouillon

1/4 tsp salt (The bouillon adds salt so taste before adding)

Instructions:

Heat olive oil in medium stock pot and add onions, carrots, celery, and zucchini. Sauté and soften for a few minutes. Add in lentils, bay leaves, broth, and boullion. Stir and bring to a boil. Turn down heat to a simmer and cook for 30-40 minutes. Stir occasionally until veggies and lentils have soften. May add more broth or water if needed.

Remove Bay leaves. Serve and add a bit of lemon, nutritional yeast, avocado, or parmesan cheese if desired. Great the next day or place in a container to freeze for when you need a quick healthy meal or snack.

Lentils are a great source of protein, pre-biotic fiber, folate and potassium. They are low in fat, rich in minerals and a great addition to help lower cholesterol, stabilize blood sugar, and increase energy. A must on your recipe rotation!

Vegan Omlette Muffins (GF)

When you are in the mood for an egg bite but without the egg, this recipe is for you. Great breakfast addition or snack.

Ingredients:

1/2 red bell pepper

1/4 onion ( red or white)

12 cherry tomatoes (cut in half)

1/2 cup mushrooms chopped fine

1 cup spinach

2 tbsp nutritional yeast

3/4 cup chick pea flour

1/2 tsp baking powder

1/2 tsp garlic powder

1/2 tsp salt

1 cup water

Instructions:

Preheat over to 375

Line or spray muffin tins

Saute veggies al dente

Add all ingredients to bowl and whisk to combine

Spoon contents into muffin cups (3/4 full)

Bake for 25-30 min

Let cool

Store in airtight containers
