- 4 cups of cubed watermelon
- 1 seedless cucumber diced
- ¼ chopped red onion(optional)
- Juice of two limes/ lemons or both.
- 2 tablespoons olive oil
- 8 mint leaves cut into strips
- Salt /pepper to taste
- Combine watermelon cucumber onion and mint leaves in a bowl
- slightly toss
- In a separate bowl mix oil salt pepper and lime/ lemon juice and mix .
- Combined all ingredients together ( hand toss) and chill
