These Salads are what I like to call ‘One bowl meals”. Nutritionally balanced, healthy and ready to keep you going for hours.
This PROTEIN packed salad is loaded with colorful veggies, sweet potatoes, red cabbage, greens, Tri color quinoa, chickpeas and cashews, with a creamy tahini dressing. Delicious and packed full of nutrition that will you all day.

Pui Lentil Farro Salad
Pui lentils are a very small Blue/ green lentil from France.They have a delicious nutty flavor.
I combine this salad with herbs, farro ( an ancient grain) tomatoes, parsley, cucumber, and greens, with a delicious dijon vinaigrette dressing.
Lentils are a powerhouse of nutrients. Filled with protein, fiber, folate and a rich source of minerals. Zinc, iron, magnesium, and also a number of your essential vitamins.
Eat the colors of the rainbow. Fresh veggies like carrots, red peppers, sweet corn (non GMO), cucumbers, greens, purple cabbage, tomato and quinoa with a Creamy Green Goddess dressing. Perfection!
Colorful vegetables are the best way to get all the health benefits your body deserves. Different color foods play different roles in the body.
Rad Pad Thai Salad w/ Ginger Peanut Sauce
A blend of cabbage, carrots, spiralized zucchini, red peppers, and edamame ( Non GMO) w/ a delicious Ginger Peanut Sauce.
Edamame is gluten-free and low in calories, they contain no cholesterol, and they are an excellent source of protein, iron, and calcium.
Greek Salad with Chickpeas
A flavourful healthy Plant Based Greek Salad that has all the traditional fixings. Greens, Cucumbers, kalamata Olives, herbs, tomatoes with a light Greek dressing. One of my favorites!
Cucumbers are full of vitamins and minerals and also have a high water content which means high hydration AND low in calories.
Quinoa Tabbouleh Salad
Fresh and Healthy salad made with quinoa (instead of Bulgar wheat so it is Gluten Free) mint, parsley, cucumber, tomato, zucchini, and fresh greens.
Did you know... Quinoa is actually a seed. High in protein and is complete with all 9 amino acids.
It is also high in fiber, magnesium, B vitamins, iron, potassium, calcium, phosphorus, vitamin E and various beneficial antioxidants.
Forbidden White Bean Salad
A mix of white beans, fresh vegetables, forbidden rice, organic greens and a herbed basil vinaigrette for a prefect plant powered lunch!
White beans have a higher calcium level than the darker beans and also high amounts of fiber ( your fuller longer), helps your skin, regulates blood sugar and much more
